Boiled garlic is very digestible and has a pleasant flavor. When paired with potatoes, butter and sour cream, well it becomes down right heavenly.
From a medicinal point of view, cooked garlic is not as effective as when it is consumed raw, but from what I have read, it does retain many of its disease fighting properties, including lowering blood pressure.
This recipe for garlic mashed potatoes is a real tasty way to start incorporating more of this healthy food into your diet.
Garlic Mashed Potatoes
4 very large Yukon Gold potatoes or potato of your choice
4 cloves fresh garlic
1 tablespoon butter
4 tablespoons sour cream
Salt and pepper to taste
Peel and quarter potatoes. Put into a pot with the garlic cloves and cover with cold water. Bring to a boil, and then simmer until potatoes are tender.
Drain the water from the pot leaving the potatoes and garlic in the pot. Add the butter and sour cream. Mash the potatoes until well broken up. Then using a hand mixer beat the potato mixture until smooth and creamy. Season with salt and pepper to taste. Serve with your favorite dish.
